Wyeast Liquid brewing yeast - British Ale 1098 strain

This top quality liquid "British Ale" style yeast is packed in its own "Smackpack" propogator pouch and contains around 25 BILLION cells of pure yeast and a smaller inner packet of yeast nutrient.

This strain is designed to produce dry, crisp, slightly tart flavours in English bitter worts. It displays medium flocculation, 73-75% attenuation and is alcohol tolerant to around 10%.

It is best matched to Brown Ales, Porters and Scottish Export and Heavy style beers.

The yeast is activated by "Smacking" the pack firmly between the palm of the hands to break the inner pack containing the yeast nutrients. The pack is then shaken vigorously to disperse the nutrient and left for around 3 hrs at around 21°-24°C to allow the yeast to incubate and swell. The contents are then added to a pre-prepared "starter" mixture made from dried malt extract and water and left for 24-48 hours before adding to your wort.

"Smack Pack" liquid yeasts require a little more work than using dried yeast, but many brewers believe they produce beers that are much closer in flavour to the original beer style. It is also possible to "harvest" some of the culture and "regrow" the yeast for several further batches to improve the cost efficiency. There are many discussions on the various homebrew forums, and in numerous brewing handbooks, that tell you EXACTLY how best to do this, so they should be consulted if you intend to try this method of "re-cycling".
