A recipe pack containing all the ingredients to make a clone, all grain version of Caledonian 80/-.
This recipe is based on the one laid down in the latest edition of Graham Wheeler's book, "Brew your own British Real Ales" and is the 23 litre version.
This Pack Contains:
Crushed Maris Otter Pale Malt or 2 cans of Coopers Light Malt Extract
Crushed Crystal Malt
Crushed Wheat Malt
Crushed Chocolate Malt
Fuggle Hops - Primary Boil Hops
Goldings Hops - Primary Boil Hops
Goldings Hops - Late Boil Hops
Irish Moss
Muntons Gold Brewing Yeast
Basic Instructions for use
There are two bags of grain. The larger grain pack contains 3kgs of crushed Maris Otter Pale Malt, whilst the Crystal Malt, Wheat Malt and Chocolate Malt used for colouring and flavouring is premixed into the smaller of the two packs, together with the remainder of the Maris Otter grain. These two packs will need to be mashed in an appropriate mash tun with a minimum capacity of 20 litres. (Sometimes, for production reasons, there may be three bags of grain in the All Grain kit - two of Pale malt and one of the combined Crystal, Wheat and Chocolate Malt. If this is the case, simply combine all three bags in the mash)
Fuggle and Golding hops are supplied as the main bittering hops and should be added at the start of the boil, whilst the secondary, aroma hop is also Golding, which is added as a post boil hop. I have adjusted the specified amount of the hops in the pack to try and match the stated EBU in the recipe.
Sufficient Irish Moss is provided to create the Hot Break precipitation of the proteins and help produce a clearer finished beer.
