A recipe pack containing all the ingredients to make a clone, all grain version of Courage Directors Bitter.
This recipe is based on the one laid down in the first edition of Graham Wheeler's book, "Brew your own British Real Ales" and is the 23 litre version.
Courage Directors is possibly my favourite ever beer (pushed very closely by Ruddles County) and this version is the nearest in taste to the one brewed by Courage when I started drinking it in the early 1990s.

Basic Instructions for use
There are two bags of grain. The larger grain pack contains 3kgs of crushed Maris Otter Pale Malt, whilst the Crystal Malt and Black Malt used for colouring and flavouring is premixed into the smaller of the two packs, together with the remainder of the Maris Otter grain. These two packs will need to be mashed in an appropriate mash tun with a minimum capacity of 20 litres. (Sometimes, for production reasons, there may be three bags of grain in the All Grain kit - two of Pale malt and one of the combined Crystal and Pale malt. If this is the case, simply combine all three bags in the mash)
In this particular recipe, an amount of "Copper Sugar" is required and this is supplied as Brewing Sugar (Dextrose monohydrate).
Target hops are supplied as the main bittering hops and should be added at the start of the boil, whilst the secondary, aroma hops are Hallertau and Styrian Golding, which are added as late boil hops. I have adjusted the specified amount of Target hops in the pack to try and match the stated EBU in the recipe. There is also a pack of Post boil hops which are added to the wort during the cooling period.
Sufficient Irish Moss is provided to create the Hot Break precipitation of the proteins and help produce a clearer finished beer.
