The Cantina range of wine kits contains 5 litres of concentrated grape juice which means that no additional sugar is required to make up to 30 bottles of wine. Unlike most of our large wine kits, which are made up to 23ltrs, the Cantina kits are made up to 21ltrs and will not actually give you "30 bottles" unless you only put 70cl in each bottle rather than the 75cl found in a "standard" wine bottle. If you are using "standard" wine bottles, you will only get about 24-26 bottles in practice.
Using a special strain of yeast, these wine kits ferment in around 5 days, clear in 2 days and are, nominally, ready to drink immediately. In practice, as with all commercial wines, it improves immeasurably if left for a few months to mature.

"Unbelievably fast. It really ferments in 5 days. I used tesco mineral water. It did clear in 2 days, but I did not de-gas it enough as per the instructions, so it was a little cloudier than I hoped. I filtered with a Boots filter and the results was very clean, bright and polished and i only used 2 filter papers for 21 litres. Result was excellent and we took several litres on holiday about 10 days after starting the kit. At our beer festival on 12th April 2009, friends could not believe it was home made and in such a short time. we had no wine left after the party. Andy recommended this 5 day kit over other makes and it was a good choice. "
