A rich, full bodied Red India Ale which uses 3kgs of Malt Extract and 1kg of Brewing Sugar (provided) to produce 30 pints at an average ABV of 6.5%. Fermentation, using the specialist American Yeast strain provided, will take approximately 10 days depending upon the ambient temperature, and the finishing gravity will be around 1008-1010.
The maltiness of the beer is balanced by the use of 100g of mixed Simcoe, Nelson Sauvin and Mosaic finishing hops which add strong Pine aromas and tropical fruit flavours. The finishing hops are in pellet form and are added during the last few days of primary fermentation.
The kit includes a pack of priming sugar which is sufficient for bottling at standard rates. If barrelling the beer, it may be safer to use only 75g of it. The beer will be ready for drinking as soon as it has cleared, but it will be at its best if you can leave it to mature for around 4 weeks after bottling or barrelling and if consumed within 3-4 months of manufacture.
As with most American style beers, it should preferably be served chilled, or in a chilled glass if storing in a barrel.
