A smooth, rich, full bodied American Ale which uses 3kgs of Malt Extract flavoured with Rum, and 1000g of Brewing Sugar (provided) to produce 40 pints at an average ABV of 6.5%.
Fermentation, using the specialist Ale Yeast strain provided, will take approximately 10 days depending upon the ambient temperature, and the finishing gravity will be around 1015-1018.
A pack of American Oak Chips is included to provide a smooth, vanilla and oak charachter to the beer. It is added directly to the wort at the start of fermentation to provide the greatest flavour. Unlike the other kits in the American Craft Ale range, this one DOES NOT have any additional hop pellets to add during the process.
The kit includes a pack of priming sugar which is sufficient for bottling at standard rates. If barrelling the beer, it may be safer to use only 75g of it. The beer will be ready for drinking as soon as it has cleared, but it will be at its best if you can leave it to mature for around 4 weeks after bottling or barrelling and if consumed within 3-4 months of manufacture.
As with most American style beers, it should preferably be served chilled, or in a chilled glass if storing in a barrel.
