Pectolase is used to break down pectin in fruit so as to avoid protein haze. It helps to ensure that the maximum possible yield of juice and flavour is obtained from crushed fruits etc.

One level teaspoon per gallon is dissolved in 1/2 cup of lukewarm water and added to the must and shaken. If using in a must made from heated or boiled fruits, wait until the fruit has cooled and increase the dosage to 2 teaspoons per gallon.
