The Cantina range of wine kits contains 5 litres of concentrated grape juice which means that no additional sugar is required to make up to 30 bottles of wine. Unlike most of our large wine kits, which are made up to 23ltrs, the Cantina kits are made up to 21ltrs and will not actually give you "30 bottles" unless you only put 70cl in each bottle rather than the 75cl found in a "standard" wine bottle. If you are using "standard" wine bottles, you will only get about 24-26 bottles in practice.
Using a special strain of yeast, these wine kits ferment in around 5 days, clear in 2 days and are, nominally, ready to drink immediately. In practice, as with all commercial wines, it improves immeasurably if left for a few months to mature.
The Cantina Montecino wine kit is a full bodied, yet fruity, "Montepulciano" style Italian red wine.
Unfortunately, in November 2012, UK Trading Standards decided that it's original name of "Montepulciano" was infringing EU protected status regulations and may have led unwary homebrewers into believing that the wine they were going to make at home, from a kit, might actually be confused with either a "Vino Nobile di Montepulciano", a DOC wine made in the Montepulciano region of Tuscany in North Eastern Italy from Sangiovese grapes, or a "Montepulciano d'Abruzzo", a light, fruity DOC wine made in East/Central Italy from the Montepulciano grape variety, which, incidentally, isn't grown in the Montepulciano region and is not included in the "Vino Nobile" wine.
Obviously, as an industry, we can't risk misleading our customers, in the same way that the Italian producers of these two commercially produced wines do, so this kit has now been renamed "Montecino" to avoid any possible confusion.
